The technique of vertically roasting salmon and other Northwest foods in front of an open camp fire was an integral part of the Potlatch, the traditional yearly gathering and celebration of the Northwest’s Native American People.

Recipe:
1 pound salmon fillet
Salish Potlatch Seasoning
2 tablespoons plain nonfat yogurt
Place salmon fillet on a lightly oiled shallow baking pan. Sprinkle 1 Teaspoon of the Salish Potlatch Seasoning over fillet. Bake in a 400° oven for about 10-14 minutes or until fish just flakes with a fork. To serve, place a piece of salmon on plate with three Wild Rice Griddle Cakes. Dollop griddle cakes with yogurt. Garnish with apple slices.
