Dilettante's Chocolatier family brought this candy making method to the Pacific Northwest many years ago introducing the dragee method of confections to the west coast. Whole dried cherries are liberally covered in two coats of rich gourmet milk chocolate. At Dilettante, we use premium Northwest dried cherries and coat the fruit twice using milk chocolate containing 38.47% cacao.
Using the dragee (pronounced draw-jay) method of candy coating, rotating dragee pans are special revolving kettles are used to coat the premium cherries in Dilettante's gourmet chocolate blends. Revolving pans coat the chocolate cherry confections perfectly and evenly resulting in a luxurious confectionary treat. The candies are finished naturally with premium chocolate making these chocolate cherry candies both a feast for your eyes and your taste buds.
