Located on the quiet waters of the Little Spokane River, just a stones through away from Spokane, Washington, the mill town of Buckeye was once a bustling community of three hundred residents. Lumber was cut from the surrounding pine and tamarack forests and milled at the Buckeye Lumber Company. Boxes made from first grade lumber were shipped from the Buckeye Box Factory to various parts of the United States via the Spokane Falls and Northern Railroads. Many local commercial apple growers shipped their fruit in Buckeye boxes. By 1912, the mill was closed and most of the townsfolk had moved on. The Buckeye Beans company was founded just downstream from this sleepy little town and was inspired to create genuine products that reflect the "simpler" way of life." Hearty soups on the back burner and beans baking in the oven provide a flavor of days gone by.
My family and I tried this soup a few years ago and absolutely loved it!!! I immediately went back to the store I bought it from and cleared off their shelf! Unfortunately, the store closed, but am glad I found the website!! If you haven't tried it yet....do so, you and your family will love it!!
Made this for dinner last evening and it was delightful! We found it in a discount store, but are pleased to know we can purchase it online. Like below, we made it using beef broth and water. Very hardy, and just the right touch of spices without burning your mouth. Anxious to purchase some new mixes before the hard winter months hit Michigan. This might be one of my new pantry staples!
Like many on here, I first found this soup at Ross Dress For Less. I now check the store every time I am in, just in case I can buy a box or two :) This is my favorite soup mix! I usually make the soup in my crock pot. We use ground turkey/chicken instead of beef, usually add some chopped celery to the onion as it's sautéing, and sometimes even add some sliced kielbasa. The seasoning packet adds a really good flavor with just enough spice to zest it up, but not too much for those who would rather not have their tongues on fire while they eat (namely, me!). The barely/lentil combination creates a rather filling meal. With a side of cornbread, this is a perfect easy fix for dinner!
A Slight Variation...Great!
A friend made this soup and shared some with us. We loved it. I had to know her recipe and was surprised when she showed me the box of Beefed Up Barley soup mix. She shared a box of it with me and we made it last night. We actually used ground venison instead of beef and then used reduced sodium beef stock in place of the water. It was fantastic.
My friend actually found this soup mix at a discount store so I am off in search of more today. But if I don't find it I am glad to know I can order online anytime. Anxious to try a few other flavors too!
I made a vegetarian version by using crumbled firm tofu instead of meat. The spices are perfect. I wish I knew what they were.
By all means, please ignore the name. This soup is so scrumptious. I'm not a meat eater so I decided to add veggies(carrot, celery & potatoe). Best idea ever! I originally purchased 2 boxes(veggie bean & beefed up barley) from Ross on a whim. The veggie bean was for myself & beefed up barley was for my fiance. Needless to say beefed up barley was so superb he never asked about the meat. Great texture with amazing flavor. Definitely a winner.
I substituted venison for the beef, Yum!
This made a tasty kettle of soup. In place of the beef, I substituted venison that had been cut for stew. We will definitely make this again!
I ALWAYS TAKE PRIDE IN MAKING MOST THINGS BY SCRATCH INCLUDING MY SOUP, HOWEVER I FOUND THIS AT A FARM MARKET IN BC AND DECIDED TO TRY IT. ITS THE BEST SOUP I HAVE EVER MADE!!!! SO GLAD I FOUND IT AND WILL USE IT ALL THE TIME. THANK YOU!!!
I bought it at Ross, had low expectations. The soup was soo delicious, I had dinner guests and they ate all the soup. Everyone loved it. I added ground turkey instead of beef. It was hearty, thick, filling. A complete meal.

I first saw these soups in a discount store and took a chance. I couldn't believe how tasty and easy the soups are to make. Who would think something so easy to make would be so delicious. I went to the store the next day and cleaned them out. I now buy them online. They are filling, healthy and low in salt but still taste great.
