This recipe is an adaptation of the standard recipe that is print on the label of Buckeye Beans complete ready to make White Chicken Chili recipe on the back of the 50 oz package. It adds a creamy cheese sauce to the combination of your own favorite white meat chicken; Buckeye Beans special seasoning and the great northern beans included in the Buckeye Beans White Chicken Chili package. Using a slow cooker adds simplicity to preparation and ultimate flavor to Buckeye Beans White Chicken Chili. Buckeye Beans Cheesy White Chicken Chili
For this recipe you will need:
- 1-1-½ lb boneless, skinless chicken breasts, cubed
- 1 Buckeye Beans seasoning packet 9 cups water
- 1 can mild green chilies chopped
- 1 large white onion chopped
- 2 tsp minced garlic
- 1 ¾ Buckeye Beans Great Northern Beans
For the white cheese sauce:
- 1 Tb butter, melted
- 1 Tb flour
- 1 cup milk
- 4 oz cream cheese
- 1 cup shredded Monetary jack or mozzarella cheese
Optional toppings:
- Shredded cheese
- Tortilla chips
- Sour cream
Directions: Rinse and sort beans, discard any foreign material. Place beans in 4 cups water in a sauce pan and boil for 5 minutes. Remove beans from the heat and place in your crock pot and let stand for one hour then drain off the water (this is a “quick soak” method to make the beans soft). Combine 5 cups water, cubed chicken, Buckeye Beans Great Northern beans, and onions to a boil and simmer covered for one hour and the Buckeye Beans seasoning packet and simmer for about ½ an hour then carefully add the white cheese sauce stirring well. Cover the crock pot and let the chili simmer for another ½ hour on low or until the beans are tender and thickened. Stir occasionally to prevent sticking. Thin with water if you desire a thinner chili. To make the white cheese sauce: In a small saucepan over medium heat, combine melted butter and flour. Whisk in the milk and heat to a low simmer. Add cream cheese and shredded mozzarella or Monterey jack cheese, stir until melted and smooth. Ladle into bowls and serve steaming. Tastes great topped with shredded Monterey jack cheese and a spoonful of sour cream. Add a side of crunchy tortilla chips and serve up a super snack fit for the winners of the 2010 Super bowl Party. Makes 8-10 servings.
